Basic beef tacos

- 1 lb ground beef
- 1/4 cup dried chilies' seeds removed and finely crushed
- 1/2 cup water
- 1 red onion finely diced
- 2-3 cloves fresh garlic' crushed
- Juice of 1 lime
- 2 tablespoons ground cumin
- 1 tablespoon paprika
- 1/2 cup fresh chopped cilantro
- Salt and pepper to taste
- Olive oil

- Soak crushed chilies in water and lime juice
- Heat a pan on med high heat and add 1-2 tablespoons oil
- Saute onion until they start to turn slightly translucent, seasoning with salt to taste
- Add cumin, paprika and garlic and cook 30-45 seconds
- Add ground beef and Chile/lime mixture
- Cook until beef is browned and most of the liquid has gone
- Season with salt and pepper and add cilantro off heat
- Serve with cheese on corn or flour tortillas
