Basic Shrimp Scampi

- 2 lb shrimp
- 1 onion diced
- 3-4 cloves garlic minced
- 4-5 tablespoons butter
- 1/2 cup dry white wine (such as Windy Wine Company's Pony Express White)
- 1/2 cup chicken stock
- Juice of 1 lemon
- Salt and pepper

- Heat large skillet on med high heat and add 3 tablespoons butter
- Season shrimp with salt and pepper and when butter is foaming in pan add
- Cook shrimp until they start to turn light pink, 1-2 minutes
- Remove shrimp and add remaining butter
- Once butter has melted, reduce heat and add onions
- Again season with salt and pepper and cook until onion start to turn translucent
- Add garlic and cook for 30 seconds
- Deglaze pan with wine then add stock and lemon juice, allow sauce to reduce by half
- Add shrimp and toss to coat and heat 30-45 seconds
- Serve at once alone or toss with pasta or put on top of rice
