Beef and Beet Salad

Beef and Beet Salad with Sour Cream and Dill Dressing

Salad Ingredients:
- 1 lb steak, such as sirloin
- 2-3 fresh beets
- 1 red onion, thinly sliced
- 1 red cabbage, cut in half then wedged, 1/2 inch thick
- 3-4 cups spring mix or spinach
- 2 tablespoons butter
- Olive oil
- Salt and pepper

Salad Directions:
- Preheat oven to 375.
- Cut tops off of beets and place on a sheet of foil
- Season with salt and pepper and add butter
- Put butter on top of beets and fold foil over beets to enclose them
- Place in oven and roast 30-45 min or until tender and skin can be rubbed off
- Remove from oven and thinly slice, set aside
- In a large pan over med high heat, add olive oil
- Season steak with salt and pepper and add to hot pan
- Cook steak to desired doneness
- Remove steak and allow to rest
- Return pan to heat, adding a little more oil
- Add onions and season with salt
- Allow onions to start to caramelize
- Move onions to sides of pan and add cabbage wedges
- Cook wedges for 2-3 minutes each side, remove cabbage and onions
- Place a handful of spring mix in a bowl and dress with sour cream dressing
- Place greens on plate and add onions, cabbage wedge, sliced beets, and thinly sliced steak
- Finish with sour cream and dill

Dressing Ingredients:
- 1/2 cup sour cream
- Juice of 1 lemon
- 2-3 tablespoons fresh dill
- Salt

Dressing Directions:
- In a bowl combine sour cream, lemon juice and dill
- Whisk to combine, season with salt as needed
