Bleecker Burger with Fried Egg

BLEECKER BURGER w/ fried egg:
8 oz. 80% fresh ground angus
Oil for searing
Salt & pepper to taste
Cheddar & Goats
Lettuce onion
Mayo & spicy mustard

Sear burger to desired temperature and top with above toppings.

8 medium potatoes boiled and chilled
1 cup mayo
Fresh herbs
Lemon zest & juice
4 Tbs. red onion
Salt & pepper to taste
Timbale ring for plating & for forming the egg
Combine all ingredients and taste for correct seasoning.
