Chicken and Waffles

- 2-3 lbs chicken breast, split and pounded flat
- 2 eggs
- 1 cup milk
- 1 cup pickle juice
- 1-2 cups flour
- 1 teaspoon each, garlic powder, onion powder and paprika
- olive oil to fry
- salt pepper
- Place chicken in pickle juice and let brine overnight
- Combine flour and spices in a separate bowl
- Combine milk and eggs in separate bowl, beat well
- Dredge chicken in flour mixture, then egg wash, than flour mix again
- Add to pan with hot oil and cook, flipping once for 2-3 minutes each side, or until chicken is cooked.

- 2 cups flour
- 1 tablespoon baking powder
- 3 eggs separated
- 1/4 cup butter melted
- 1-2 cups milk
- 2 tablespoons sugar

- Heat waffle iron
- Beat egg whites until stiff peaks form, set aside
- Sift flour salt sugar, and baking powder in large bowl
- Add egg yolks and enough milk to bring to a thick batter
- Gently fold in egg whites
- Cook batter in waffle iron until desired doneness.
- pinch of salt
