Chocolate Coconut Truffles

1 tbsp coconut oil
1 c. almonds or walnuts, soaked for at least 4 hours or overnight and drained
6 organic dates soaked in hot water to soften (or raw honey to taste)
3 tbsp raw cacao powder

½ tsp vanilla

¼ tsp sea salt
Shredded coconut

1. Place coconut oil, nuts, dates, cacao powder, vanilla and sea salt in a food processor and blend until desired consistency (may choose chunky or smooth texture).

2. Roll into small bite size balls and roll into shredded coconut. Place in the refrigerator for 15 minutes to set.
