Curried Ground Lamb

Ingredients:
- 1 lb Ground Lamb
- 1 onion, diced
- 1/2 cup finely grated carrots
- 1 clove garlic, minced
- 3-4 tablespoons curry powder
- 1 can diced tomatoes
- 1 teaspoon honey
- 1/2 cup plain yogurt
- 1 tablespoon olive oil
- 1/2 cup finely chopped parsley
- Salt and pepper to taste

Direction:
- Heat skillet on med high heat,
- Add oil and onions,carrots and cook 3-4 minutes.
- Add garlic and curry powder, cook 1 minute
- Add Lamb and cook, 3-4 minutes, adding water if needed
- Add honey and tomatoes, cook 5-6 minutes
- Salt and pepper to taste
- Take off heat, stir in parsley and yogurt, serve on rice or with flatbread
