Eggplant , Feta and red pepper roll ups

1 eggplant, pealed and diced. soak in water for 10 minutes
1 chopped and seeded red pepper
cook in olive oil until very soft (about 20 minutes)
add 1/4 cup crumbled feta cheese

roll into a spiral in a colorful tortilla wrap
cut on a bias int half inch sections for a nice presentation
