Fresh made pasta with feta cheese, shrimp, broccoli, & mushrooms

Fresh pasta :

3 C semolina flour
3 C all purpose flour
4 egg yolks
2 T olive oil
1 T salt

Combine all ingredients in a kitchen aid with dough hook wrap and chill dough for several hours... Then roll with semolina flour and cut using a pasta machine

For shrimp medley:
1 # fresh shrimp deveined
4 C blanched broccoli
1/2 C shallots
2 T Fresh chopped garlic
3 C fresh sliced button mushrooms
2 1/2 C fresh crumbled feta cheese
Olive oil for sauté
Salt & pepper to taste
Fresh basil for tossing into pasta and garnish

For the finish:
Medium high heat sauté the mushrooms, reduce heat to medium low, add shrimp & remaining ingredients (except the feta cheese)and cook until done through. Be careful to not over cook the shrimp! When add pre cooked fresh pasta a war through. Mix well and toss with fresh torn Basil! Cheers!!
