Gluten Free Skillet Enchiladas

  • 1 1/2 lb. Lean Ground Beef
  • 2 t. Cumin
  • 2 t. Garlic
  • 2 T.Lard
  • 2-15 oz. can beef broth
  • 3 T. Gluten Free Baking Mix
  • Salt
  • 3 T. Chili Powder
  • 16 oz. Shredded Colby/Jack Cheese
  • 10-12 Corn Tortillas
Brown beef and drain and season with
 cumin, garlic and  salt to taste.
In a separate skillet, melt lard, mix in baking mix and salt.
Mix chile powder with broth and add to skillet and
cook on med-high heat until slightly thick.
Individually dip warmed tortillas in sauce,
fill with cheese and place on top of beef in skillet.
Top with more cheese, cover and let simmer 5-10 minutes.
