Herb Roasted Vegetables

6 cups assorted washed and trimmed vegetables, cut into uniform 1-inch pieces

¼ cup heat-stable vegetable oil

Pepper and sea salt, to taste

Herbs, as desired

All you do:

1.       Preheat oven to 400º F.

2.       Place vegetables in a single layer in pan.  Drizzle with oil and stir. 

3.       Add seasonings and stir to mix.

4.       Bake until desired tenderness, 30-45 minutes, stirring every 10-15 minutes.
