It is acceptable to use commercially prepared cheesecake and caramel sauce.
12 oz sugar
2 T water
1/2 t lemon juice
1/2 cups heavy cream
2 oz butter
Melt and caramelize sugar water and lemon juice until golden brown.
Remove from heat and carefully add cream, you may reheat to remove lumps, whisk in butter until smooth.
Slice 1/2 pound of strawberries and gently heat in caramel, pour over and around cheese cake.
