Penne Alla Vodka

1/2 stick butter

1 shallot or onion diced

pinch of crushed red pepper

2 oz. vodka

1 can of crushed tomatoes

2 bay leaves

3/4 c heavy cream

salt and pepper

1 lb of pene pasta- cook til done, drain and save some of cooking water, and set aside

  In a pan melt butter, add red peppers and shallots and saute' 3-4 minutes. Then add vodka, let cook and let alcohol evaporate, then add bay leaves, and tomatoes and let cook 3-4 minutes. Season with salt and pepper, and then add cream and let simmer 4-5 minutes. Add the pasta and mix all together and then serve.
