Poached Swaii Fillets with Pistachio Rice

Ingredients:
- 2 lbs swaii fillets
- 1 onion, diced
- 3 dried chilies, chopped
- 3 cloves garlic, thinly sliced
- 1 can evaporated milk
- 1 tablespoon each: Fenegreek seeds, paprika, tumeric
- 1/2 teaspoon each: cinnamon, ground cardomen, allspice
- Coconut oil
- Salt and pepper to taste
- 2 cups prepared jasmine rice with 1/4 cup chopped pistachios

Directions:
- Heat 2 tablespoons oil on med high heat
- Add onions and season with salt, cook until softened
- Add chilies, garlic and spices, cook for 1 min
- Add milk and bring to low simmer
- Add salt and pepper to taste and carefully add fillets to liquid
- Poach 3-5 min, or until fish is cooked
- Serve over pistachio rice
