Sausage Florentine with Penne Pasta

1 lb sausage
1 sm onion chopped
6 oz. fresh spinach
5 tbl olive oil
4 tbs of tomato paste
Splash of White Wine
Salt & Pepper to taste
1 lb Penne pasta
4-5 fresh tomatoes chopped
 Cook sausage in a pan with olive oil for 5-6 minutes, add onions and let
cook for 3-4 minutes. Add white wine and let evaporate. Season with
salt & pepper. Add tomato paste, add some water, let cook for 3-4 minutes.
Meanwhile, cook pasta. While pasta is cooking, add spinach, let the spinach welt,
for a few minutes. When pasta is ready, drain and add to mixture. Fold everything
together and serve. Add cheese(optional).
