Seared Bone in Pork Chop w/ bourbon glaze, crushed heirloom potatoes spring vegetables

Serves 4

4- 1 1/4 inch bone in pork chop
Oil for searing
Salt & pepper to taste


1 lb. small heirloom potatoes (blanched and ice bathed)
1/2 lb. heir covert (green beans blanched)
Cherry tomatoes
Diced crispy bacon
Red onion
Salt & pepper to taste

Bourbon Glaze:
1/4 c. bourbon
Crispy bacon
1/4 c. brown sugar
1/8 lb. butter

Sear chop hard on both sides to achieve a crispy texture... Finish on low heat.

Crush until flat blanched heirloom potatoes, then sear on high heat until crispy remove and reserve.

Sautéed green beans, cherry tomatoes, garlic and bacon. Remove & reserve.

In a separate pan on high heat, add a tablespoon oil, bacon and cook, then add garlic but do not burn garlic. Deglaze pan w/ bourbon (careful of flare ups), set aside briefly to cool and then add brown sugar and return to low heat until sugar melts. Slowly fold in cold cubed butter until sauce forms.

Plate crispy potatoes on plate, then top with sautéed green bean mix. Then mount with pork chop and drizzle on bourbon glaze.
