Spinach Salad with Sweet Blackberry Vinaigrette

1/2 c. organic blackberries

·         2 tbsp Hy-Vee Select balsamic vinegar

·         2 tbsp Hy-Vee honey

·         2 tbsp Hy-Vee Select olive oil

·         1/4 tsp Hy-Vee vanilla

·         1/4 tsp Hy-Vee salt

·         1 (9 oz) bag fresh spinach

·         1/2 c. crumbled Gorgonzola cheese

·         1/3 cr. sliced red onion

·         1/3 c. purchased glazed walnuts

All you do

1.     In a blender combine blackberries, vinegar, honey, oil, vanilla and salt. Pulse to desired consistency.

2.     In a large bowl, toss spinach, cheese, red onion and blackberry mixture.

3.     Stir in walnuts before serving.
