Tequila Lime Chicken salad

Ingredients For the Chicken:
- 3-4 chicken breasts, butterflied and halved
- 2-3 eggs
- 1 1/2 cup Masa flour
- 2 tablespoons cumin
- 1/4 cup chicken broth
- 1 tablespoon paprika
- juice of 2 limes
- 1/4 cup tequila
- salt and pepper
- Olive oil
- Heat 1-3 tablespoons oil in pan on med-high heat.
- Combine flour,1 tablespoon cumin and paprika in separate bowl, mix well.
- Beat eggs and 1 tablespoon water in separate bowl
- Season chicken with salt and pepper, dip in egg mixture to coat, then into masa mixture.
- Place chicken in pan and cook, turning one, until chicken is done, about 3-4 minutes each side.
- Remove chicken.
- Add 1 tablespoon of cumin to pan, stir well.
- Deglaze pan with tequila.
- Add juice of 2 limes and chicken broth, stir well
- When sauce thickens to coat spoon, return chicken to pan and coat well, remove from heat

Ingredients For the Salad:
- Spring mix
- juice of 2 limes
- 4-5 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin

- Combine oil, lime juice, salt and cumin in small bowl, wisk to combine dressing.
- Toss dressing with salad greens right before serving.
- Serve with chicken breast and sauce on top.
