Ziti with Walnut Sauce

2-3 T. olive oil
2 shallots
1 garlic clove
3 oz. walnuts
4 oz. Ricotta
1/4 c. cream
fresh parsley
dash of paprika
salt & pepper
1 lb. ziti pasta

In a pan, saute the shallots, garlic and walnuts. Season with salt, pepper and paprika 2-3 minutes. Add Ricotta and dilute with cream until it thickens a little, for 3-4 minutes. Meanwhile, cook pasta. When ready, drain and add to the mixture. Add parsley and toss all together, and serve.
