Fried Polenta with Poached Eggs

Ingredients:
- 2 eggs
- 1- 1/2 inch thick prepared polenta
- 2 mushrooms, sliced
- 6 cherry tomatoes, halved
- 1 tablespoon dried basil
- 1 clove garlic minced
- Olive oil
- Salt and pepper

Directions:
- Heat 1 gallon of water to boil, reduce heat to light simmer
- Meanwhile, heat 1 tablespoon oil in skillet
- Add mushrooms and a pinch of salt
- Cook mushrooms until water has drawn out, add garlic, basil and tomatoes
- Cook 30 sec and move to side of pan
- Add 1 teaspoon oil to pan and place polenta in skillet
- Cook polenta until golden and flip
- At this time add egg to simmering water, swirling water gently, repeat with second egg
- Poach 2-3 minutes
- Serve golden polenta with eggs and mushroom/tomato sauce
