Southwest Steak and Corn Cake Appetizers

For the Steak:

Ingredients:
- 1 lb sirloin steak
- 1 tablespoon paprika
- 1 tablespoon ground cumin
- Salt and pepper

Directions:
- Season steak with salt and pepper
- Cover steak with paprika and cumin
- Pan sear or grill steak to med rare
- Allow steak to cool


For the Corn Cakes

Ingredients:
- 1 cup flour
- 1 cup cornmeal
- 3 eggs
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder

Directions:
- Combine dry ingredients in a large bowl
- Add eggs
- Add enough milk to bring to a pancake like batter
- In a skillet on med heat, cook small bite sized " pancakes" turning once
- Top cakes with steak, jalepino pepper slice, sour cream and cilantro
