Chicken Arrabiata with Penne

Chicken Arrabiata with Penne
4 T. olive oil
2 garlic cloves
1/2 onion
1/4 t. chili flakes
1 can crushed tomatoes
fresh basil
2 chicken breasts
salt & pepper
1 lb. penne pasta
Romano cheese or Parmigiano

In a pan, place 2 T. oil and cook chicken for 3-4 minutes on each side. When done set aside and cut in cubes. In the same pan, add the rest of the oil and saute the onion, garlic and chili flakes 2 minutes. Add tomatoes and adjust for seasoning. Let simmer for 5-6 minutes. Meanwhile, cook pasta. When ready, drain. At the same time, add chicken to the sauce and let cook for 2 minutes. Afterwards, add pasta into the mixture. Stir and when it's all coated, serve and top off with cheese.
