Beans are an economic and healthful food choice
(Makes approximately 6 [1-cup] servings.)
All you need:
1 small onion, chopped
2 tablespoons vegetable oil
2 (16 oz. each) cans kidney beans, rinsed and drained
1 (16 oz.) can chickpeas, rinsed and drained
1 (8 oz.) can no-salt-added tomato sauce
1 (14-1/2 oz.) can no-salt-added whole tomatoes
1 tablespoon oregano
1 tablespoon cumin
3 tablespoons chili powder
1 teaspoon thyme
1 teaspoon basil
2 cloves garlic
All you do:
1. Sauté onion in oil for a few minutes.
2. Add remaining ingredients and bring to a boil.
3. Turn down heat and simmer 20 minutes.
