For the Salsa:
1lb. fresh peaches, pit removed and diced very fine
1 tomato, seeded and diced fine
1 small red onion, diced finely
1 clove garlic, minced
5-6 jalapeno peppers, diced finely
1/4 cup finely chopped fresh cilantro
Juice of 1 lime
Salt and pepper to taste
Combine all ingredients into a bowl and stir to combine, let set refrigerated for at least 1 hour.
For the Shrimp:
1 lb. raw shrimp, shells removed
1/2 cup sugar
1/2 cup salt
1-2 small chili peppers, diced
juice of 1 lime
1 Tablespoon butter
1 teaspoon chili powder
Combine salt and sugar in 1 quart cold water and stir to dissolve.
Add shrimp and brine for 1-2 hours no longer than 4.
Heat butter in skillet over med. high heat.
Add peppers and chili powder and cook 30 seconds.
Add lime juice and stir 20 seconds.
Add shrimp and cook, stirring constantly to coat, until shrimp is done, 2-3 minutes.
Serve at once with chips and salsa on side.
Add peppers and chili powder.
Drain liquid and rinse shrimp with clean water.
