Crayfish Etouffee
Windy Wine Company's Crayfish Etouffee

Ingredients:
- 1 stick of butter
- 1 large chopped onion
- 1 cup chopped celery
- 1/2 cup chopped bell peppers
- 1 pound peeled crayfish tails
- 2 teaspoons minced garlic
- 2 bay leaves
- 1 tablespoon whole wheat flour
- 1/2 cup water
- 1/2 cup Windy Wine Company Pony Express White (or any high quality dry white wine)
- 1 teaspoon salt
- A Pinch of cayenne
- 2 tablespoons finely chopped parsley
- 3 tablespoons chopped green onions

Directions:
- In a large skillet, melt the butter on med heat
- Add peppers, onions and celery and cook 6-8 minutes, until softened
- Add the crayfish tails, garlic and bay leaves and cook 4-5 minutes
- Mix the water, wine and flour in a small bowl, add to skillet and stir
- let mixture thicken, adding salt and cayenne to taste
- Serve over steamed rice with fresh parsley and green onions
