Eggs in Hash Brown Nests
 

Ingredients:

 

Cooking Spray

Shredded potatoes, your choice of whichever of these is handy:

1)    20 ounce pkg. refrigerated shredded hash browns (will fill 12 muffin tins)

2)    One bag frozen, but completely thawed, hash browns

3)    Box of “Betty Crocker Seasoned Skillets hash browns” (5.2 ounce) with added water, salt,  margarine per instructions on box.

4)   Best of all are not-quite-baked-through baking potatoes; cooled, peeled, shredded.

One-fourth cup cooked, crumbled bacon or sausage, chopped cooked ham, if desired.

Twelve large or medium eggs (X-L too big) or one egg for each muffin tin you’re using.

Salt/Pepper to taste

 

Instructions:

 

Heat oven to 400 degrees.  Spray a 12-cup muffin pan (or however many you will need) with cooking spray. (f you don’t use all the muffin cups in a unit, you might put a few tablespoons water in the empty cups to keep them from burning and to aid in the distribution of heat).

 

Place shredded potatoes in a medium bowl.  Stir in bacon bits or other meat if used.  Divide mixture evenly among muffin cups, shaping “nests” along the bottom and up the sides of each muffin cup; push the potato mixture a bit above the side of the muffin cup (they’ll brown and look pretty).  Generously salt and pepper the ‘nests’.   Bake at 400 degrees about 15 minutes or until golden brown on edges.  Remove from oven.

 

Reduce oven temperature to 350 degrees.

 

Crack 1 egg into each muffin cup.  Sprinkle with salt and pepper.  Bake at 350 degrees about 15-18 minutes or until egg yolks are creamy-firm, but not hard-cooked.  Cool 5-10 minutes before removing from muffin cups. 

 

Servings – allow two nests per person; 12 eggs will serve 6 people.  Green/red grapes nice garnish.

 

Uses for egg shells:  When cracking the egg, try to have the lower part of the shell bigger, wash, dry, set in egg carton, put in potting soil, plant a seed.  Spray with water when needed while seed germinates.  When substantial, plant in garden, shell and all.  Shell will disintegrate and provide minerals for growing plant.

 

Put eggshells on top of coffee grounds for a clearer brew.

 

Broken bits of shell with hot soapy water inside a narrow vase or thermos and shaken well will perform a cleaning service.
