Garlic Chili Shrimp

- 1 lb shrimp, raw and shell on
- 4-5 cloves garlic' thinly sliced
- 1-3 dried red chili peppers, roughly chopped
- 3-4 tablespoons coconut oil
- 1/2 cup fresh chopped parsley
- juice of one lemon
- Salt and pepper
- Steamed rice

- Season shrimp with salt and pepper
- Heat oil on med-high heat
- Add garlic when oil is hot enough to start frying garlic
- Add peppers and stir 20 - 30 seconds
- Add shrimp to pan, don't overcrowd
- Cook shrimp until they develop a darker red color, turning once
- Add lemon juice and cook, 30 seconds
- Remove from heat and add parsley
- Serve over rice
