Scotch eggs

- 6 eggs hard boiled, cooled and peeled
- 2 lbs sausage
- 4 eggs beaten
- 1/2 cup flour
- 1/2 cup bread crumbs
- Salt and pepper
- Oil to deepfry

- Divide sausage into six equal portions
- Place an egg in each portion and for meat to surround egg
- Dredge meat covered egg in flour, then dip in egg mix, then roll in bread crumbs
- Heat oil to 350
- Deepfry covered eggs 2-3 minutes, untill sausage is cooked
- Cut in half, salt and pepper to taste, serve with mustard
