Lino's Italian Sausage & Mushroom Sauce

 

4 tbsp olive oil

2 garlic cloves chopped

1 small onion chopped

8 oz fresh mushrooms chopped

1 lb Italian sausage

2 tbsp fresh parsley

 2 heaping tbsp tomato paste –diluted

Salt & Pepper

½ c white wine

1 lb spaghetti

 

            Cook sausage in olive oil, when browned, add onion, garlic & mushrooms. Cook 3-4 minutes. Add wine, let evaporate & simmer about 2 minutes. Add salt & pepper. Add diluted tomato paste, parsley, readjust seasonings & let simmer. Meanwhile cook pasta accordingly, when ready drain & add to mixture. Coat everything well & serve. Top with cheese.
