Pasta Con Pesce Spada Alla Siciliana
2 slices sword fish
1 eggplant
10 cherry tomatoes
4-5 T. olive oil
fresh mint
salt & pepper
white wine
1 lb. penne pasta
garlic

Cut the eggplant in cubes, add salt and let set for a few minutes. Cut the fish in cubes. Rinse the eggplant and dry with paper towels. Add oil to a frying pan and fry the eggplant. When golden brown, take out the eggplant and set it aside. Meanwhile cook the pasta. In eggplant pan, add the garlic, tomatoes and parsley with oil. Cook for 3-4 minutes. Add fish and wine. Let simmer for 3-4 minutes. Afterwards, add eggplant to the fish mixture. Pasta should be ready and drain it. Add pasta and fresh mint, and toss it all together. Serve.
