Sweet Yogurt and Peach Crepes
3 peaches sliced
1/4 cup red wine
1 T. vanilla
¼ cup sugar
 
Gently simmer peaches for a couple of minutes (shorter for more ripe peaches).
 
1 cup nonfat yogurt
Mix in about a half cup sugar (to taste).
 
Crepes
 
  •   1 3/4 cups all-purpose flour
  • 1/2 teaspoon coarse salt
  • 2 cups whole milk, room temperature, plus more if needed
  • 3 large eggs, room temperature
  • 2 1/2 ounces (5 tablespoons) unsalted butter, melted, plus more for skillet
Mix together, let rest about 20 minutes
Cook in buttered nonstick pan just like thin pancakes.
Assemble in creative ways.
